Cold Searing

Ingredients

Instructions

  1. Place the food in a cold, non-stick skillet without oil. If cooking chicken breasts, lightly coat both sides of each breast with oil.
  2. Place the skillet over high heat and sear the food without moving it for two minutes, then flip the food over and sear another two minutes.
  3. Reduce the heat to medium, flip the food and continue cooking, flipping every two minutes until the interior of the food reaches the desired temperature.
  4. Remove from heat, let the food rest at least 5 minutes, then serve.
